Ever since my mother opened a Christmas gift from her friend in 1966, which turned out to be an Aebelskiver Iron, which we didn’t know what to do with, we have been making Aebleskiver on Christmas morning; so far the tradition has gone through several generations. I was excited to see Aebleskiver: A New Take on Traditional Danish Pancakes, by Scandinavian author and designer, Pim Pauline Overgaard, to get ideas for more flavors of these puffy Danish pancakes. The first chapter covers the important aspects of a proper Aebleskiver pan, as well as how to use it. What follows is the best part: the recipes.

This cookbook features dozens of recipes, both sweet and savory, for Aebleskiver. Most are appealing, and most are accompanied by sides and/or salads that complement the pancake balls. The recipes are written in the traditional manner with the ingredients listed first, followed by step-by-step instructions that make it easy to follow for both beginners or advanced books. Each recipe is accompanied by beautiful, professional photographs, which makes the cookbook even nicer, but also harder to decide what to make next.

All told, this is an excellent cookbook for anyone who loves Aebleskiver, and anyone who wants to taste them.
