Irish Chocolate Stout Cake
When St. Patrick’s Day rolls around, I often take one of my favorite Irish cookbooks out and search for good recipes to make that week. David Bowers’ Real Irish Food always has recipes that inspire me to prepare good Irish food for at least a week around that fun Irish holiday. This Irish Stout Cake has been loosely adapted from this cookbook, and it is delicious, especially with a liberal topping of light, rich, and creamy cream cheese frosting.

Although this yummy cake will disappear quickly, leftovers of this traditional stout cake keep well in an airtight container for several days.

16 Servings

1 12 oz. bottle Guinness Stout, or other stout
1/2 cup butter

2 cups sugar
1/2 cup unsweetened cocoa, preferably Dutch

1/2 cup sour cream
2 large eggs
1 teaspoon vanilla extract

2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

Cream Cheese Frosting
4 ounces softened cream cheese
1/2 cup softened butter
2 1/2 cups powdered sugar
1/4 to 1/3 cup heavy whipping cream
1 teaspoon vanilla


  1. Preheat oven to 350°.
  2. Spray a 9" springform pan with non-stick spray, then line with parchment and spray the parchment.
  3. Pour the stout into a large saucepan; turn the heat to medium and add the butter.>/li>
  4. Heat just until the butter has melted; turn the heat off and whisk in the sugar and unsweetened cocoa powder.
  5. Whisk in the sour cream, eggs, and vanilla.
  6. Place a fine strainer over the mixture; measure the flour, baking soda, baking powder, and salt into the strainer and shake through.
  7. Whisk the mixture until smooth. Pour the batter into the prepared springform pan.
  8. Bake 45 - 50 minutes or until the cake begins to pull away from the sides and a toothpick inserted into the center comes out clean.
  9. Remove from the oven and cool thoroughly.
  10. Frost the top with the cream cheese frosting.

  1. Cream cheese frosting: Whip the butter and cream cheese until light.
  2. Add the powdered sugar and enough heavy whipping cream to make a very light frosting, beating until smooth.
  3. Stir in the vanilla.
